Place this in a baking dish and sprinkle with freshly ground pepper and unrefined sea salt. Cook in the oven at 350 degrees for 30 minutes, adjusting the time depending on how quickly the veggies are done. After removing from the oven, add chopped fresh basil and drizzle with olive oil.

Earth Day was the brainchild of Senator Gaylord Nelson of Wisconsin. He believed protecting the environment wasn’t being adequately addressed in politics or the media, so he created a unique event, celebrated for the first time on April 22, 1970. With an estimated 20 million people celebrating this first nationwide endeavor, it sparked a surprising turnout that has continued to grow annually.

The tremendous support of Earth Day, environmental awareness and healthy, sustainable practices led to the creation of the Environmental Protection Agency and passage of national legislation including the Clean Air Act, Clean Water Act, and Endangered Species Act. 3 Recipes to Make for St. Patrick’s Day

CloversFor the residents of the Villas at Hermann Park in Houston, Texas, St. Patrick’s Day is cause for celebration. On Friday, March 17, everyone is a little Irish and here are three recipes to help get you and your party guests into the spirit.

Smithwick’s Ale Basil Bread

We’re all well aware that St. Paddy’s Day and beer go hand in hand. And, even though it has not yet received its due as a federally-recognized day off from work, it falls on a Friday this year here. That means many of us won’t have to rise and shine the day after. Here is a beer-infused side to help soak up some of the hops.

Ingredients: Olive oil to line a baking sheet, 3 ¼ cups of flour, 1.25 ounces of active dry yeast, 1.5 teaspoons of salt, one-half teaspoon of black pepper, 3 ounces of grated Parmesan, 12-ounces of Smithwick’s Irish Ale, and one cup chopped basil.

Combine dry ingredients in a large mixing bowl. Add Smithwick’s and mix. Form loaf on a floured surface. Place on oiled sheet and bake at 400 degrees for about 45 minutes or until center is firm. Test by with a toothpick.

Cheesy Guinness Dip

In keeping with the beer-infused holiday, your guests can stay true to the theme with a solid beer dip.

Ingredients: 2 packages of soft cream cheese, 1/3 cup of Guinness, 1 teaspoon of salt and black pepper, ½ teaspoon of onion powder, and 2 cups of shredded pepper jack or preferred cheese.

Combine thoroughly in a mixing bowl and serve with pretzels, crackers of chips.

Murphy’s Irish Sliders

Sliders are always a party favorite. They’re bite-sized tweeners that are more than an appetizer, but less than a meal. A good stout like Murphy’s can keep your food Irish focused.

Barbecue Sauce Ingredients: 2 tablespoons of olive oil, 4 garlic cloves thinly sliced, 1 cup of hoisin sauce, I teaspoon of white pepper, ¼ cup of soy sauce, 12 ounces of Murphy’s Irish Stout. In a saucepan, cook garlic in olive oil for 30 seconds, then add remaining ingredients for 10 minutes or until thick.

Chicken Ingredients: 2 tablespoons olive oil, 1 pound of thinly sliced, boneless chicken breasts, 18 ounces of Murphy’s.

Combine ingredients in a deep skillet until chicken is fully cooked. Remove chicken and place in a saucepan with barbecue sauce to simmer and stir occasionally. Insert into slider rolls and serve.
